Chef @enrico_krluk once again showed us his superb knowledge and filleting skills!
 
This time he was a guest in our space, where he demonstrated his skill of "fighting" with our caught specimen of bluefin tuna weighing as much as 100 kilograms.
 
As he himself pointed out, in addition to knowledge, the right equipment is also key; professional filleting knives and a specially equipped space in which the fish is processed and filleted.
 
Chef Enrico added that, in addition to knowledge and the right equipment, the quality of the "goods" itself also plays a big role - in this case, top-quality, wild-caught bluefin tuna, which was processed on a fishing boat with the expert Ikejime technique, which is essential for the quality of the meat. A true example of what every tuna should look like.
 
Chef Enrico showed us what masterful filleting looks like, and we showed us what a properly caught, bled, cooled and properly stored bluefin tuna looks like!
